I am planning to come to Hilton Head over Thanksgiving and am planning to surf fish there (or fish from jettys, if there are any). I am an experienced pier fisherman but have limited experience surf fishing. I have some decent saltwater gear e.g. Penn 7500ss, Penn 5500ss, Penn 450ssg. I have a 10' Penn surf rod and several 6.5' Penn pier rods. What kind of fish can be caught in the surf at that time of year and what is good bait to use. Most of my experience has been catching Red Fish, Spanish, Trout, Blue Fish, Pompano. Not interested in shark fishing.

I went fishing a little north of you at Fripp Island and caught fish all day long on shrimp. Usually I use squid, but they weren't touching it. Using a two drop rig, they were only hitting the bottom hook and never hit the top. I am going back Thanksgiving and will buy some one drop bottom rigs using a 3 oz sinker.

Why buy rigs? All that extra hardware probably doesn't impress the fish. Just tie a simple drop-loop onto your line at whatever height you want it and put your weight at the bottom..... better than wasting money on rigs!

I never buy rigs, I make them myself.

For surf fishing, I would probably use a fish finder/carolina rig:
