For bait? I don't really care for serrated knives. I have found a gut hook useful on shark skin, or a roofers hook blade razor knife works well too. Other than that, a straight blade is best for cutting meat.

Dexter Russell 8" Serrated

They stay sharp a long time. You can also sharpen them with a Sharpening Steel. They are wicked sharp out of the wrapper.

Serrated is the best knife for bait for drum fishing for me. You can saw a big 5 pound plus mullet head in half if you want to put it out into the impact zone.

Dexter Russell has recently gone down a bit in quality as far as the handle for what is called the Basic series, the new handles are hollow instead of solid, but the blade is the same.

Been using them for decades.

I go to thrift shops try to pick up the ginzoo knives or other serrated blades .50 cents apiece. Never worry abt leaving them anywhere or loosing them. They cut thru bone and skin with no problem.
