blues

got my hands on a couple nice size blues need a gud batter or cooking technique to go with them

Loudog from the board let me taste the crabcake like things he made with the blues.

I think he grilled the blues...then flaked the meat into a bowl and mixed garlic, lemon pepper, pepper, onion, green pepper (chopped for onion and green pepper)....ummm.....cant remember what else. Anyway he then mixed it all up, then dropped spoonfuls of the mixture into some hot grease. Talk about delicious! Kinda reminded me of salmon patties but way better.

The fillets are good too...just make sure to cut the bloody middle part out (should give you 2 long skinny fillets per side) and season, roll in flower and cornmeal and fry. Those that I cooked inspired me to throw my gotcha plug a few thousand times in the spring.
